With nearly two decades of homebrewing experience and a doctorate in chemistry from UC San Diego, our head distiller Justin McCabe has chosen to weave these two passions together to reinterpret traditional spirit recipes.
117° West Spiced Rum uses our white rum base and is infused with all fresh ingredients including orange and lemon zest along with spices that include whole Madagascar Vanilla beans, cloves, allspice, nutmeg, ginger, and cacao nibs. We only produce 10 gallons at a time.
This spirit pairs well with ginger in a modified Dark ‘N Stormy and makes a deliciously spicy Cuba Libre.
