Dalmore has produced whisky on the north shore of the Cromarty firth since 1839. While many distilleries favour bespoke casks, created specifically to mature whisky, Dalmore sources sherry butts and wine barriques direct from producers. It’s a policy that has seem the distillery become a leader in whisky blending and finishing.

The 2022-release of The Dalmore 21 Year Old was initially matured in American oak casks and finished in first-fill Matusalem oloroso sherry butts from Gonzalez Byass, creating layers of rich fruit and warm spices throughout the palate.

Tasting Notes: 

• Nose: Seville oranges, bitter chocolate, Columbian coffee and vanilla
• Palate: Sweet liquorice stick, Black Forest fruits, roasted walnuts and thick marzipan
• Finish: Peaches, ginseng, pear tarte tatin and blood oranges
