The spirit is initially matured in American white oak ex-Bourbon casks, yielding soft vanilla and honey notes. For its final maturation, the whisky is transferred into casks which have held 30-Year Old Matusalem Oloroso Sherry. These casks are exclusively provided to TheĀ Dalmore from the renowned Gonzalez Byass bodega and give the whisky its rich, deep chocolate character.
