Select Blue Weber Agave Plants are harvested in the Los Altos (Highlands) region of Jalisco.  Each agave plant takes 8-10 years to reach the perfect age.  The Los Altos region is known for its rich soil and large agave plants.  The temperatures in Los Altos drop considerably in the evening which requires the agave plants to take longer to reach maturity.  We believe that quality is worth the wait.
