Rustico Puntagave Sotol is made from wild-harvested desert spoon in Northern Mexico's Chihuahuan Desert. Before being harvested, the plants mature for 15 years on the mountaintop, storing huge amounts of natural energy. Slow steam boiling of wild-harvested herbs, natural fermentation with champagne yeast, and distillation in a double-column copper still are all part of the art manufacturing process.
