Sherwood Estate Pinot Noir is crafted to showcase the vibrant fruit and elegance typical of New Zealandās Waipara Valley. According to the wineryās tasting notes, most of the blend is placed into open-top fermentation tanks for a pre-ferment soak before fermenting naturally with indigenous yeast. Another portion is fermented in tank with pump-overs, and a small portion is reserved for whole-berry carbonic maceration. After fermentation, the wine undergoes partial micro-oxygenation to help it soften and round out earlier.
