Echigo Yuzawa is famous for heavy snowfall and hot springs. When the snow melts, it becomes clear spring water from which the brewery makes beautifully clean sake. In 1855, Tosuke Minatoya founded the brewery on the Mikuni Road, an important road connecting Niigata prefecture and Tokyo. Shirataki sake was a favorite among travelers and the brewery became a popular stop on the mountain pass. The name of āJozen Mizunogotoshiā is originally derived from Chinese philosopher Lat-tze. The original meaning is āA good way of living is to live smoothly and flexibly like water by changing shapeā. Inspired by this, the brewers used this name for a sake based on their philosophy that āgood sake will come close to clear water without limit".
