The Wakaebisu Ninja comes from the Wakaebisu Shuzo brewery in the Mie Prefecture. It is made with the Gohyakumangoku sake rice and on-site well water. Wakaebisu is an artisanal brewer in a region with a long running agricultural importance. The Mie prefecture at one time was the sole source of food for the Emperor and is said to be the birthplace of the “Ninja.” Wakaebisu’s history goes back to the mid 1800’s. In more recent times the brewery has won National awards for its sake nearly every year since 1986.Â
